We’ve been loving quesadillas lately. They’re easy, quick, and versatile. If you have a lot people to feed in the house, quesadillas are easy because you can add almost any ingredient into them. Not only have we been loving quesadillas, I also switched from cooking them in the oven to a griddle top. Game changer. Mix in some spreadable cheese in addition to your traditional shredded cheese for a restaurant style, but macro-friendly three-cheese quesadillas.
I was browsing my grocery store for tortillas options that could fit my macros a bit better than your traditional tortillas. My boyfriend prefers the larger tortillas and layers two for his quesadillas – not really an option for me. The Mission Carb Balance Whole Wheat Tortillas (don’t fall for the name, read the nutritional label – these have 34 carbs) are pretty good, but I knew that Joseph’s Bakery made an even better option for a flexible dieter. I found the Flax, Oat Bran, and Whole Wheat Tortillas near my grocery’s “natural” foods so take a peak around that section if you can’t find them with the other tortillas.
These tortillas are only 80 calories, 12 carbs, 7 protein, and 2.5 fat – that is awesome! I can finally have quesadillas with two tortillas instead of having to fold over the one Mission tortilla.
The secret ingredients for this recipe are the Laughing Cow cheese and Mrs. Dash Table Blend seasoning. Feel free to use cream cheese or another spreadable cheese in this quesadillas, I promise it will change your life. What You’ll Need
- 2 Joseph’s Flax, Oat Bran and Whole Wheat Flour Tortillas
- 2.5 ounces ground chicken – I prepped this at the beginning of the week, use your favorite protein here
- 45g bell peppers
- Three cheese options – I used a Laughing Cow White Cheddar wedge (cream cheese is also an option), 28g mozzarella, and 14g Velveeta cheddar
- Mrs. Dash Table Blend seasoning
- Dipping options: guacamole, salsa, Greek yogurt, pico de gallo
Liberally coat a griddle top or pan with non-stick cooking spray and heat to medium. Grill bell peppers until slightly tender and set aside. On one tortilla, spread the Laughing Cow cheese and set aside – this tortilla will the topper. Layer the crumbles and bell peppers onto the second tortilla and add spread other two cheeses on top evenly. Sprinkle a small amount of Mrs. Dash Table Blend onto the fillings – taco seasoning or chili powder would work too.
Place the first tortilla on top and gently add the two tortillas to the heated griddle. Cook for 3 to 5 minutes until golden brown and gently turn the quesadilla over with a turner. Cook the second side for another 3 to 5 minutes until golden brown and the cheese is melty!
Remove from heat and slice with a pizza cutter into six pieces – six pieces is key I promise. Serve along side your favorite dipping options. I used salsa, guacamole, and Greek yogurt.
Calories and macros for everything: 419 kcal, 36 carbs, 18 fat, 41 protein that includes the dips I had on the side. Of course this is a more caloric dense meal, but compared to getting a quesadilla at your neighborhod bar and grill this is much easier to fit your daily macros.
