    This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue.     This week I’m back to counting my calories and macros after having a week off for vacation.     Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats.
