    Mid-Year Check In | 2016 Goals

A lot of people make New Year’s Resolutions for themselves at the turn of year, but I rarely hear anyone talking about their previous year’s resolutions and if they achieved them. Maybe some just forget what their resolutions were or maybe they aren’t looking to reflect on the past, but I enjoy looking back at goals I set for myself to see what I achieved and I what I can continue to improve upon. Lucky for me, I blogged all about my New Year’s Resolutions and My 2016 Fitness Goals, and I wanted to see how I’m doing so far now that nearly half the year is already over. I’m always…

Tofurky and Cucumber Wrap | Recipe of the Week

This week’s recipe of the week is super simple and great for summer. I decided to switch to maintenance calories and macros this past week, seeing as summer is here which means more social hours and eating out. New macros means more carbs! Not a ton more, but I don’t have to be as restrictive or careful when meal planning. This recipe came about because when I got home from Wednesday cardio someone had eaten all of the leftover pizza I had been looking forward to all day. So I improvised. I had some leftover Tofurky slices and FlatOut wraps from my mini kebab meal prep last weekend, so I grabbed…

Tofu Tacos | Recipe of the Week

How many taco recipes can I share until it’s too many taco recipes? I would say none! I love tacos and I have a bunch of recipes for them. Just a few weeks I saw this book on Instagram called Dragons Love Tacos which is just about the cutest thing ever. Also, since yesterday was Cinco de Mayo, this is appropriate right? Lately, we’ve been having tacos on a weekly basis at home, and honestly I could eat them everyday. This is recipe I threw together because I had most of the ingredients already in the fridge and wanted to use them up. I had a half of a full cube…

Peanut Butter Roll Up | Recipe of the Week

I’ve made a new food discovery and I’m loving it – peanut butter protein roll up. For the past two weeks this has been my favorite snack for a preworkout or even in the evening if I’m craving something sweet. A few months back I purchased the Jif peanut butter powder hoping it would be a replacement for peanut butter when I had the craving. Sadly, this powder mixed with water is not the same as a big scoop of traditional peanut butter. Instead we’ve been adding it into our protein shakes trying to use it up, then one day I thought adding my regular protein powder to it would be a good…

Salmon Tortilla Soup | Recipe of the Week

Last week I was putting together a salad with some of the store bought packaged salmon, and on the back of the Chicken of the Sea package I saw this recipe: salmon tortilla soup. Done! I always see chicken tortilla soup recipes floating around on Pinterest, but since I don’t eat chicken I’ve never made any of them. Sure I could make them vegetarian style with beans or tofu, but I feel like it just wouldn’t be the same. I love salmon though, I always have, even when fish wasn’t in my diet so this was the perfect replacement. Making meals with my Crock Pot is my favorite ways to cook and…
