    Happy Meal Prep Sunday! This is my meal prep from last week and thought I would share it you a little different than I have in the past.     Last week I wanted to take the time prepping my lunches and some of my dinners for the week. The weather was going to be the hottest we’ve had yet, so I planned for mostly cold meals for most of the week so we didn’t have to even turn on the oven.     This recipe is an oldie but a goodie! I remember my aunt made this recipe for a family gathering years ago and I’ve been making it ever since.     And yet another work week begins! It’s been a long time since I’ve done a big meal prep Sunday and I was feeling totally inspired this week. Lately I’ve been making a lot of tasty dinners and been taking the leftovers to work as my lunch, which works nicely with my busy schedule.
