    We’ve been loving quesadillas lately. They’re easy, quick, and versatile. If you have a lot people to feed in the house, quesadillas are easy because you can add almost any ingredient into them. Not only have we been loving quesadillas, I also switched from cooking them in the oven to a griddle top. Game changer.     Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats. Since I order vegetarian friendly quesadillas, they’re also usually lacking good protein. This week I wanted to challenge my standard quesadillas and make it macro friendly to fit my macros!
