    Shrimp Scampi with Zucchini Noodles

Recipe of the week is back! I’m not going to commit to posting a new recipe every single week, but I’m going to do my best to post a new recipe at least twice a month. As I promised in my first Meal Prep Sunday post of 2017, because I got this Spiralizer for Christmas I have many zoodle recipes coming. I already shared my Marinara Zoodle recipe in that same post and I’m still loving it, but I made this shrimp scampi recipe last weekend and it brought me back to my childhood. I used to love pasta and shrimp scampi when I was in my teens, but I haven’t…

Tuna and White Bean Salad | Recipe of the Week

A few weeks ago I prepped a bunch of salmon fillets and froze them for weeks that I didn’t feel like doing meal prep Sunday. Then Sunday came along and I didn’t feel like eating salmon – tuna it is. I’m still in process of incorporating chicken back into my diet – I started with basic grilled chicken and I’m not sure how I feel about it yet – so until then I still like to have fish prepped for days I need good protein macros and low carb macros. Salmon is my go-to, but I’ve kind of grown tired of it. Maybe I just need a new way to…

Summer Workout Routine | Back to Basics

I feel like my workout routine and progress has been all over the place in 2016. I started out the year wanting to do a cut, then after I started that I decided that eating at deficit for 12 weeks was too depressing. During spring and early summer I got into powering nearly joining a new gym to train for the sport. I didn’t end up switching gyms because training gyms are very expensive, and also far and in between within my city limits. Not too mention I hit I lifting plateau in them middle of summer; nothing makes lifting more of a drag than no gains. I was so excited at the beginning of…

Grilled Salmon Patties | Recipe of the Week

This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue. I didn’t have all of the same ingredients as Kevin, but I was able to make it work with what I had in the house. I’ve made salmon patties in the past, but this recipe called for a few extra steps and ingredients that made binding and cooking easier. what you’ll need  10 ounces salmon – I used Kirkland canned…

Vegetarian Quesadillas | Recipe of the Week

Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats. Since I order vegetarian friendly quesadillas, they’re also usually lacking good protein. This week I wanted to challenge my standard quesadillas and make it macro friendly to fit my macros! After making this recipe, there are aspects I could change in the future to lower the calories and maybe fat macros, but overall I’m happy with this recipe and made it fit my macros for the day. what you’ll need 2 Mission Carb Balance Soft Taco Tortillas 50g Morningstar Griller Crumbles (or ground beef)…
