Salmon Tortilla Soup | Recipe of the Week

Last week I was putting together a salad with some of the store bought packaged salmon, and on the back of the Chicken of the Sea package I saw this recipe: salmon tortilla soup. Done! I always see chicken tortilla soup recipes floating around on Pinterest, but since I don’t eat chicken I’ve never made any of them. Sure I could make them vegetarian style with beans or tofu, but I feel like it just wouldn’t be the same. I love salmon though, I always have, even when fish wasn’t in my diet so this was the perfect replacement. Making meals with my Crock Pot is my favorite ways to cook and…

Thai Tofu Lettuce Wraps | Recipe of the Week

This Friday, I don’t have Friday Favorites and I also didn’t have enough stand out products in March to dedicate a whole post to. I did however have a favorite recipe that I made this week and I thought now would be a good time to make a change. I went to school for journalism so I love writing and sharing ideas, it was just a matter of taking the time to do it.…

Plan With Me | Gym Schedule, Meal Prep, Activities

To keep me on track with everything, I like to sit down at the beginning of every week and plan a schedule including gym days and my meal prep. I use my planner and weekly whiteboard to add a schedule, and get ready for meal prep Sunday. So come and plan with me for my weekly gym schedule, meal prep, and activities. PLANNER I have a basic Mead planner that I purchased during Back to School this past fall. It’s a standard 8 1/2” X 11” size which may be large for some, but I love having extra room to jot down notes and lists. I write my work schedule into the…
