    FDOE | Weekend Edition

    I thought it would be fun to share a full day of eating over the weekend when I tend to be a bit looser with my macros. I also tend not to eat the three traditional meals of the day like I do during the week. On Saturday and Sunday, I think in terms of meal 1, meal 2, etc. instead of breakfast, lunch, and dinner. During the week, I still eat about six times a day, but three of those meals are definitely larger and are very distinct.     A few weeks ago I prepped a bunch of salmon fillets and froze them for weeks that I didn’t feel like doing meal prep Sunday. Then Sunday came along and I didn’t feel like eating salmon – tuna it is.     This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue.     This week I’m back to counting my calories and macros after having a week off for vacation. Jake and I traveled to Vancouver for a week, taking in all the sights and eating whatever we wanted – read about our trip here.     Vegetarian Quesadillas | Recipe of the Week

    Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats. Since I order vegetarian friendly quesadillas, they’re also usually lacking good protein. This week I wanted to challenge my standard quesadillas and make it macro friendly to fit my macros!
