    Last week I wanted to take the time prepping my lunches and some of my dinners for the week. The weather was going to be the hottest we’ve had yet, so I planned for mostly cold meals for most of the week so we didn’t have to even turn on the oven.     Vegetarian Quesadillas | Recipe of the Week

    Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats. Since I order vegetarian friendly quesadillas, they’re also usually lacking good protein. This week I wanted to challenge my standard quesadillas and make it macro friendly to fit my macros!
