    Enjoying Summer

    This week I’m taking a break from my usual recipe of the week. I’ve been slacking a bit on the blog posts lately, and that’s simply because I’ve been out enjoying summer. Minnesota’s summers are short lived, and once you get out and feel the warm air you don’t want to go back inside. Our summer’s are around three months, but they can be a bit longer if you end up with a mild spring and/or fall.     Mexican Inspired Summer Meals

    The past few weeks I’ve been super into Mexican inspired dishes for healthy summer dinners. I’ve never been one for Mexican food, but something about avocados and cilantro lately has tasted amazing. My go-to site for recipes, suprise, surprise is Pinterest. I’ve found quite a few good recipes that I’ve made for both Jake and I that have gone over very well. The Cilantro Lime Shrimp Tacos has a lot of steps and because of the seafood, tends to cost the most, but it’s very delicious.     Summer Plans

    Plans for summer are finally starting to come together. Jake and I have been talking about summer plans since March, and for a while we weren’t sure everything we were planning was going to happen, but finally we have made plans and taken time off work for our adventures. The first part of summer was a move at work. My work’s office made a big move a few weeks ago and I’m loving it.
