    This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue. I didn’t have all of the same ingredients as Kevin, but I was able to make it work with what I had in the house.     Happy June! For the first time in my memory, I’m enjoying the warm, summer weather. It’s been the 80s the past few weeks and I was loving it, though I could do without the humidity. I consider myself a fall girl and have dreaded summer in years past. I’ve gone the past two summers without air conditioning and my hair expands larger in width by the minute during Minnesota’s humid summers.     Gardening Goals

    Last spring, I planted my first seeds in a garden hoping to have an abundance of lettuce for salads in fall.  Unfortunately, I was only able to make one salad with those seeds.  My mom always grew flowers and vegetables in her garden when I was growing up, but I never took a liking to it and did not learn her ways.   In the past few years, my interest in gardening has slowly grown along with my interest in cooking and healthy eating.  This spring I’m hoping to make a small vegetable garden on the side of our house to make at least two salads come fall.
