    It’s been a while since I’ve posted on my blog and honestly, I’ve been focusing on my YouTube channel. When we first started self-isolation back in March, I really started working on video ideas to build up my channel’s videos.     I know it’s a little ironic to share a recipe that uses tofu as it’s main source of protein only a week after posting about possibly going back to eating chicken. I’m still considering adding chicken to my diet, leaning more towards a yes, but that doesn’t mean I’m completely against vegetarian-friendly options.     This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue.     Enjoying Summer

    This week I’m taking a break from my usual recipe of the week. I’ve been slacking a bit on the blog posts lately, and that’s simply because I’ve been out enjoying summer. Minnesota’s summers are short lived, and once you get out and feel the warm air you don’t want to go back inside. Our summer’s are around three months, but they can be a bit longer if you end up with a mild spring and/or fall.     Healthy Tuna Salad

    This week’s recipe was once again found on Pinterest – find the Pin here and follow my Pinterest. I only recently tried tuna, and was surprised at how similar it tasted to salmon, so I’m looking to try some new recipes with it. Last week we added a few cans of the fish into the some ramen noodle salad to get the protein macros up. Then I found a mayo-free tuna salad recipe on Pinterest with only a few ingredients, the flavoring ingredients being red onion and cilantro.
