    At the end of the day I usually have some extra room for carb macros and I do that on purpose – I like snacking.     A few weeks ago I prepped a bunch of salmon fillets and froze them for weeks that I didn’t feel like doing meal prep Sunday.     Sometimes you just need a good, melty quesadilla. I love getting quesadillas when I go out to eat, but I know they’re loaded with carbs and fats.     And yet another work week begins! It’s been a long time since I’ve done a big meal prep Sunday and I was feeling totally inspired this week. Lately I’ve been making a lot of tasty dinners and been taking the leftovers to work as my lunch, which works nicely with my busy schedule.
