This week’s recipe is inspired by @FitMenCook who also has an awesome YouTube channel of delicious recipes made with healthy macros in mind. Last week I was planning for meal prep Sunday, and he had posted an Instagram video of salmon patties as an alternative for grilling at a barbecue. I didn’t have all of the same ingredients as Kevin, but I was able to make it work with what I had in the house. I’ve made salmon patties in the past, but this recipe called for a few extra steps and ingredients that made binding and cooking easier.
what you’ll need
- 10 ounces salmon – I used Kirkland canned
- 28 ounces bread or panko crumbs
- green onions
- 1 large egg
- non-stick spray
If using canned salmon, open the cans and drain excess water. Add salmon into a food processor or blender along with the bread or panko crumbs and the egg. Blend together until the salmon starts to bind together. Add the mixture into a bowl and stir in the cumin to your taste and the green onions. We have green onions growing in our garden so I just cut a bunch from the top and diced them up. Heat a skillet or grill and add non-stick spray. At this time, I also turned on my oven on to around 250 degrees to finish cooking the patties. I find that finishing the patties in the oven ensures that the egg is cooked all the way through – this is really an optional step. Divide your salmon mixture evenly into four patties and place on the skillet to grill. Cook on each side for about five minutes before placing them into a small baking dish. Cook in the oven for about five minutes. Serve hot or let cool before freezing for meal prep.
For this meal prep, I added the patties into my EasyLunchboxes containers on top of a small spinach salad with a side of quinoa salad and a hard boiled egg. It made for a nice meal prep for the week and had ideal macros for my lunch. I like to microwave the pattie for about 30 seconds before placing it back on the spinach salad. I also like to add a bit of raspberry vinaigrette to the spinach before eating, again this is totally optional.
Calories and macros on the spinach patties only: 135 calories, 5.5g carbs, 22g protein, 2.7g fat. This recipe yields four salmon patties, so if you wanted to double the recipe and get enough for a week of meal preps and a few extra to freeze.
