Friday Favorites | 3.25.16

So we had a nice little snowstorm this week – yay spring in Minnesota! Good news is that most of it should melt away by the weekend. As you’re reading  this, I’m also getting done with work for the week since we had a half day on this Good Friday. I’m taking the extra time to hit the gym right away so I can start enjoying my Friday afternoon off for a Happy Hour.

RECIPE

Let’s start off with my favorite recipe for the week. I posted my meal prep on Instagram over the weekend and it seemed that a lot of people liked the sound of it! I was super surprised because it’s such a simple recipe that you can make when short on time. If you have a bunch of Easter eggs leftover from this weekend, this is perfect for you!

The meal prep was for a Cottage Cheese and Egg Salad that I prepped in my favorite Easy Lunchboxes, and made into an adult Lunchable with some fruit on the side. This would also be great on sandwich thins or in a lettuce wrap. I ate mine with the crackers or a rice cake on the side New go to lunch!

Cottage Cheese and Egg Salad

You’ll Need:

  • 1.5 C Cottage Cheese – I like 4% (fewer carbs)
  • 5 Hard Boiled Eggs
  • Seasoning – I used seasoned salt, others that could work are endless – dill, garlic salt, lemon pepper, sriracha, etc. Choose your favorite!
  • Containers for storing

Hard boil the eggs to a softer setting, let chill. Peel and roughly chop the eggs, and add to a mixing bowl. Add in cottage cheese and seasoning, combine well. Yields about three servings, measuring just over 1/2 cup per serving. Calories and macros on my recipe per serving: 227 calories, 4g carbs, 23g protein, 11g fat.

BEAUTY 

ColourPop I <3 This So I wore this last weekend and I loved it – perfect name. I mentioned in my recent review of ColourPop that I probably wasn’t going to be able to wear this shadow during the workweek due to it’s metallic finish, and that’s still true, but when I wore it to the mall on Sunday it was an easy yet glamour inspired look. I added a brown winged liner to the finish off the look, and it was perfect! All week, I’ve been doing a similar look inspired by that one with a more wearable (less metallic) lid shade, like the new L’Oreal Colour Riche Eyeshadow in Pain au Chocolat.

Tarte Emphaseyes Waterproof Amazonian Clay Cream Shadow | I got this cream eye shadow a few holidays ago in a value with that also include the Amazonian Clay 12-Hour Blush – which I also love, but I never really gave this shadow any attention. Sadly both of these products have been discontinued. I kind of thew this shadow in my drawer and used other bronzy shades like Maybelline’s Bad to the Bronze and ELF’s Crusin Chic instead. I grabbed this one to use as a base for ColourPop’s I <3 This and for some reason enjoyed it more than a bronze base. The Tarte shadow pulls a lot more taupe than others in my collection and it works great for grabbing the color I <3 This, not just just the metallic glitter.

NYX Microbrow Pencil & NYX Control Freak Eyebrow GelEveryone and their mom loves the NYX Microbrow, including me! For the past few weeks I was actually using a brow powder for filling in any sparse areas in my brows, and I thought I liked it, but then I used the NYX pencil again and I’m not going back. It’s so quick, easy, and natural to use. I also go through my brows with the NYX Control Freak Brow Gel, which is a holy grail product. Some people don’t prefer this brow gel because the brush is kind of large for the brows, but I find the holding powder and quality is worth the larger brush size. I also love that NYX is more readily available in stores – you can both of these products at Ulta or Target, maybe even CVS.

Maybelline Master Hi-Light Powder Blush | I bought this blush at the recommendation of Coffee Break With Dani when she included it in her top five blushes video, especially because we’re similar in skin color and tone. I dug this out of my collection and threw it on Sunday with the I <3 This shadow look I did and it was perfect. The color is a soft coral with shimmer that acts as a highlight to the skin. The color can be sheer at first, so I like to build it up with a layer or two.

I found that the lasting powder on this during a work day is so-so and requires a touch up. In order to help with the lasting powder I layered it on top of the  NYX Cream Blush in Rose Petal and it really helped during an 8-hour work day. I don’t reach for cream blushes very often, usually just summer at a lakeside, or when I need to layer a less pigmented blush.

FITNESS UPDATE

I’m planning on posting a separate fitness update before my trip, but I have some small updates to share. Due to our little snow storm and a shin splint I had this week, the gym didn’t happen as many times as I would have liked. On Sunday I did a double workout, shoulders/bicep and cardio circuits because I had already planned to skip the gym on Monday for a bingo night my dad and grandparents. I’ve never really done two workouts in one day, and I didn’t mind it since it gave me an extra day off to have some leisure time. Sadly, I think I exerted myself a little too hard and that’s what caused a skin splint.

I signed up for a one mile sprint with my job in the beginning of May! It’s organized with my job so I’ll get to have a little friendly competition with my coworkers to see who finishes the fastest. I’ve never ran any kind of race, even a one mile one, but I know I can do it. I’m hoping to come in under an eight-minute mile, something I know I can do if I train. I’ll start training for that after I return my from LA. My dad’s company is hosting a 5K the same week as the one mile, and I’m considering signing up for that – running a 5K is on my 2016 Fitness Goals!

As for the next two weeks, I’m going to really try to focus on the food I’m eating. I’ll get more into this in my update, but I’m really bad at sticking to eating strictly while on cut (or most of the year). Don’t get me wrong, the meals I’m eating are healthy, wholesome, and include the macros I need, but I tend to snack more than I should on not so great options – I love Salt and Vinegar chips and yogurt covered pretzels. Any who, I’m two weeks out from LA trip so I want to focus on getting cut for the trip – lots of dresses to be wore and bikini time!
