    Our Galtinburg & Knoxville Vacation

Back in August, we traveled to Gatlinburg for our first vacation together in over two years, and I’m just now getting around to sharing the details. I know, I know, way behind. Our schedules have been crazy ever since we got back and I haven’t been balancing it very well (obviously). I had intended on sharing this blog post shortly after we returned, but honestly time just got away from me. In total, our vacation was five days, spending three days in the Smoky Mountains, hiking and exploring Gatlinburg, and another two days in Knoxville eating good food and enjoying the up and coming city. This was our first time visiting…

    At-Home Quad Circuit

Ah, summer. You keep me so busy. I love summer and truly appreciate all that it offers given Minnesota’s polarizing seasons. But that doesn’t make my schedule during summer any less crazy. August has especially been very busy with summer coming to a closed, preparing for a vacation, and having a huge project at work I’ve had to be creative with some of my workouts. Protein Packed Oatmeal

If you’ve been following me on Instagram, you’ll know that one of my favorite evening treat is a big bowl of protein packed oatmeal.  Yes, I eat my oatmeal for dessert. If I can swing it, I’ll have oatmeal as my preworkout and again in the evening. Even in the summer months. I’m going to go out on a limb here, but I think dessert oats are superior than the traditional morning oats. Easily. Agree or disagree? Having a higher carb meal before bed may sound scary if you’re new to tracking macros or calories. I know that I feared eating carbs after dark growing up and in my early 20s.…
